Paleo Pointers
Choose almond flour instead of rice flour as rice is a grain. Also, omit potato starch and use arrowroot flour instead, and add a teaspoon of liquid as it is dryer than potato starch. Do not use corn starch as corn is a grain.
Tapioca, according to Mark’s Daily Apple, is one of the “safe starches.” It’s a toxin-free, antinutrient-less, dense source of carbohydrate that comes from cassava. In powder form, tapioca is simply dried, ground root.
In addition, MDA also states that Xanthan gum is a bacterial product. Glucose from corn is usually involved in the process, but some manufacturers do not use corn. The final product should not contain any corn product. Most people with corn allergies don’t have reactions to xanthan gum.
It takes a little experimenting and time to get the right GF flour mix down and you may need to adjust your liquid consistency when making different confections such as cupcakes versus cookies.
